I am vegetarian so I can not include meat in my meals.I am sharing a vegetarian version of traditional parsi dhansak which is totally inspired by master chef Sanjeev Kapoor.
Parsi Dhansak recipe | how to make Parsi style veg dhansak with detailed photos and video recipe: –Dhansak is a popular Indian dish, originating among the Parsi Zoroastrian community.It combines elements of Persian and Gujarati cuisine. As I have told, Dhansak is made by cooking mutton or goat meat with a mixture of lentils and vegetables. This is served with caramelised brown rice, which is rice cooked in caramel water to give it a typical taste and color. The dal cooked with mutton and vegetables served with brown rice altogether is called dhansak. I have already share Parsi brown rice recipe HERE.
The technique of cooking expensive ingredient (meat) by combining it with vegetables and/or lentils in the same recipe is widely employed in Persian cooking.The Gujarati element of the recipe is the liberal use of a variety of Indian spices and condiments, in contrast to the more mellow Iranian recipes. In Parsi homes, dhansak is traditionally made on Sundays owing to the long preparation time required to cook the lentils and vegetables into a mush, (in the days before pressure cooking was employed). Dhansak is also always had on the fourth day after the death of a near one. There is no meat consumed for three days after the death of a near one. Ingredients
for dhansak masala paste:
- 1 inch cinnamon stick
- 3 nos cloves/ laung
- 2-3 medium green chilies
- 1 inch ginger
- 7-8 nos garlic cloves
- 1 tsp cumins
- 1 tsp coriander powder
- 1 tsp red chili powder
- ½ tsp garam masala
- 1 tsp water
other:
- 1 cup toor dal, washed
- 1.5 cup mix vegetables, brinjals,potato,cabbage,cauliflower
- ½ cup methi leaves /fresh fenugreek
- salt to taste
- 1 tsp turmeric powder
- 2 cups water, to boil mixture
- 2 tbsp oil
- 1 medium onion, chopped
- 1 medium tomato, chopped
- fresh coriander, for garnishing
Instructions
For dhansak masala paste preparation:
- add ginger, chili ,garlic, bay leaf, cinnamon stick, cloves in a mixture jar.
- add coriander powder, red chili powder , garam masala powder.
- Add water and crush it to a smooth paste.
- keep it aside.
dhansak preparation:
- take a pressure cooker and add washed toor dal in it.
- Add mix vegetables into it.
- Add methi leaves,salt and turmeric powder.
- add water and mix it well.
- pressure cook the mixture for 5 whistles on medium flame.
- Once the mixture is cook, mash it really well.
- heat oil in pan.
- Add crushed dhansak masala and saute it for a while.
- add chopped onions and saute it.
- add tomatoes and cook it until soft.
- Add cooked dal mixture.
- add water and mix.
- cook the mixture for 5-7 mins on medium flame.
- serve hot with brown rice.
Notes
- Once the mixture is cooked,mash it really well. You can even use the blender to crush it to a really smooth and creamy mixture.
- you can even add your choice of vegetables to make this recipe more comfy to you as per your choice.
