maharashtrian varan recipe| how to make varan bhaat recipe is the one recipe I always wanted to try. Varan is a traditional Maharashtrian yellow dal recipe which is prepared with toor daal. It has a very light garlic flavor and prepared with minimal ingredients.
Varan is the recipe usually prepared during ganesh chaturthi in maharashtra, India. Those who are new to indian cooking, Varan-bhaat would read as lentils-rice as varan is lentil curry or stew in english and bhaat means rice.
There are many variations of varan recipe. Varan is a vegan, low-fat and less oil recipe. The recipe is very simple and very easy to prepare. In this recipe, I added a tadka of ghee on the top but you can totally skip this. Also, I didn’t add jaggery in this varan recipe but some versions of varan may have the little bit of sweetness.
As I have said, I tried to prepare the recipe very simple so that this recipe is very light to consume and healthy as well. It can go best for the lunchbox. You can add onions, tomatoes and green chilies in this recipe to make it more prominent. But in my case, I personally feel that garlic is enough.
Coconut is also the main ingredient of the Maharashtrian recipe as it instantly adds the rich flavor to the recipe. The recipe I shared today is “sadha varan” which literally means “plain dal”. This recipe is a perfect everyday recipe and below are some

how to make Maharashtrian varan recipe? stepwise photos:
Take a pressure cooker and transfer toor dal in it. Also, Add water.
pressure cook the dal for 4 whistles on medium flame. mash it and keep it aside.
now, heat oil in pan and mustard seeds.
when they crackle, add asafoetida and minced garlic.
add dry coconut and saute for a while.
now, add boiled dal and gently mix.
add salt to taste and turmeric powder.
cook the mixture for 10 min on medium flame.
for tadka
now, heat ghee in tadka pan.
once the ghee is hot enough, add red chili powder and pour this tadka on the dal.
serve hot with plain rice.

- Âź teaspoon mustard seeds
- a pinch of asafoetida
- ½ teaspoon turmeric powder
- ½ teaspoon garlic , minced
- salt to taste

- Âź teaspoon red chili powder
Instructions
