This Macaroni pasta is made with some seasonal ingredients like tomatoes, sweet potatoes, so tasty and inspired by Indian cuisine. This is a perfect fall recipe as this macaroni is soothing, warm, and comforting 🙂

Recently I got a chance to work with one of the most reputed Pasta brands in Canada. Barilla is one of those few brands I have purchased in my initial days in Canada. I remember, I grab penne pasta from barilla and made it in instant pot. I have already shared the recipe here too.
Additionally, It is my first fall season in Canada and It is so beautiful here. This is the season when you get so many vegetables and fruits. I thought to give an Indian touch to the pasta.

Ingredients required to make this macaroni
For cripy sweet potato tikkas
Sweet potatoes – A good quality of sweet potatoes is the heart of the recipe. The variety I am using here is “garnet” sweet potatoes.
Tikka Marination – gram flour, oil, garlic, red chili powder, coriander powder, turmeric powder and salt is used here. Now, You can add a pinch of garam masala and a small spoon of curd too. I am avoiding it here especially for this recipe.
For pasta
Farm fresh field tomatoes 🍅 and red pepper – these two ingredients makes the amazing red pasta sauce.
seasoning – This recipe is Indian style macaroni recipe so, seasonings used here are inspired by Indian cuisine.
Macaroni – Barilla Macaroni made from semolina is used in this recipe.
how to make macaroni and sweet potato tikka
preparing pasta,
Boiling pasta – Bring water to boil. Add salt and oil. When water starts boiling, add pasta and cook until softened. Strain it and keep aside.
Take a mixer jar and transfer tomatoes and red pepper in it. Make a smooth paste.
heat oil in the pan. Saute garlic and add tomato puree in it.
add spices like salt, chili powder, turmeric powder and bay leaf and mix well. Cook sauce until thickens.
add boiled pasta and mix well. cook for 2 minutes. sprinkle some fresh basil leaves and keep aside.
tikka preparation
cut sweet potatoes into medium pieces.
take a bowl and prepare a marination. transfer garlic, gram flour, oil, turmeric powder, red chili powder, salt and mix well.
add sweet potatoes and coat the marination well. If you have sufficient time then keep aside for 30 minutes atleast.
heat pan and grill sweet potatoes on medium flame.
Assembling,
in a serving bowl, add pasta and top it with grilled sweet potatoes.
You can add some lemon juice on the top of sweet potatoes.

Indian style Macaroni with sweet potato tikka
Ingredients
For macaroni
- half pack barilla macaroni pasta, or 2½ cup macaroni approx
- 4 cups water, to boil macaroni
- salt to taste
- 1 tablespoon oil
to make macaroni sauce,
- 2 medium field tomatoes, or 1 large
- ½ cup red pepper
- 1 tablespoon oil
- 1 teaspoon garlic, minced
- salt to taste
- 1 teaspoon red chili powder, peparika
- 1 bay leaf
- ½ teaspoon turmeric powder
- a small pinch of garam masala
- 3 to 4 fresh basil, chopped
- 2 tablespoon grated cheese, optional
for sweet potato tikkas
- 1 medium sweet potato, diced
- salt to taste
- 2 tablespoon gram flour (besan)
- 2 tablespoon oil
- 1 teaspoon garlic, minced
- 1 teaspoon red chili powder
- ½ teaspoon turmeric powder
- 1 teaspoon corinader powder
- a pinch of chaat masaka, optional
- ½ teaspoon curd / yogurt, optional
Instructions
Pasta preparation,
- Boiling pasta – Bring water to boil. Add salt and oil. When water starts boiling, add pasta.
- cook pasta on medium flame until softened.
- when pasta is cooked completely. Drain it and run it in a cold water.
- Keep aside.
- preparing pasta – Take a mixer jar and transfer toamtoes and red pepepr in it. make a fine puree.
- heat oil in a pan.
- add minced garlic and tomato puree.
- add salt, turmeric powder, bay leaf, red chili powder and mix well.
- cook the sauce on a medium flame for 5 to 7 minutes. Adjust the sauce consistency according to your taste.
- When the sauce is ready, Add boiled macaroni and mix it well. cook for another 3 minutes on medium flame. At this stage, You can add some cheese and fresh basil leaves if you like.
- Keep aside.
Preparing tikkas
- First, wash and cut your sweet potatoes into medium pieces.
- take a mixing bowl and transfer gram flour, oil, salt, turmeric powder, red chili power and coriander powder in it.
- mix it well.
- transfer sweet potatoes into it and mix it well. make sure to mix it with your hands so that your potatoes coated well with marination. The moisture of your hands will help to spread the marination properly.
- Keep this mixture aside for an hour atleast.
- heat your pan and grill/roast it on medium flame. Sweet potatoes will be soften quickly. It will usually take 5 minutes on medium flame. However, Don't forget to check with your fork before serving.
Assembling,
- take a serving bowl and transfer pasta into it.
- top it with grilled sweet potato tikkas.
- serve hot.

- This recipe is inspired by Indian cuisine so the spices used here are Indian spices.
- You can add/adjust the amount of cheese as per your liking. I personally don’t like cheese in my red sauce pasta so I am avoiding it. You can add Parmesan which gives the best result.

Love the Indian spices and warming sweet potatoes in this recipe. We love Barilla pasta too. They have some delicious gluten-free pastas as well.
