Mayonnaise needs no introduction. The vegetarian version of Mayonnaise is commonly known as mayo. It is believed that mayonnaise was first introduced around the 1750s. Later, Mayonnaise appeared in French cookbooks in the 18th century. Eggs are the basic requirement of mayonnaise. We don’t eat eggs hence sharing this egg-free substitute.

Ingredients

Below are the ingredients required to make eggless mayonnaise.

Note – at the time of clicking this pic, I forgot to put mustard powder here along with other ingredients.

Hung curd – I made this substitute with homemade hung curd. There are other versions too which does not include hung curd but in our version, Hung curd is a hero ingredient.

fresh cream – Fresh Cream is important for the texture. I used half-half cream here but you can use full cream or indian cooking cream too.

Oil – Any cooking oil will work great here. I have used olive oil here.

spices and seasoning – Mustard powder is the main ingredient here. Other than that I used, salt, suagr, herbs and black pepper powder.

How to make egg-free mayo?

Take a mixing bowl and transfer oil and cream into that. Also, Transfer hung curd too. mix it slowly for 2 mins.

Add salt, sugar, herbs, mustard powder and black pepper powder.

Mix every thing very well. make sure there are no lumps.

Use as required.

Can we store this mayo?

Yes! This Mayo can stay fresh for 10 days in a refrigerator. make sure to store it in an air-tight container. Do not freeze it.

Ingredients 

  • 1 cup hung curd
  • ¼ cup fresh cream, I have used half-half cream here.
  • ¼ cup olive oil
  • ½ teaspoon sugar
  • salt to taste
  • ½ teaspoon herbs of your choice
  • ½ teaspoon black pepper powder
  • ½ teaspoon mustard powder

Instructions

  • Take a mixing bowl and transfer oil and cream into that.
    ¼ cup olive oil, ¼ cup fresh cream
  • Also, Transfer hung curd too. mix it slowly for 2 mins.

  • Add salt, sugar, herbs, mustard powder and black pepper powder.
    ½ teaspoon sugar, salt to taste, ½ teaspoon herbs of your choice, ½ teaspoon mustard powder, ½ teaspoon black pepper powder
  • Mix every thing very well. make sure there are no lumps.
  • Use as required.

Notes

  • You can add ½teaspoon lemon juice if your hung curd does not sour a little bit. However, Adding lemon juice is totally optional and depends on your taste.
  • You can use your choice of herbs.

  1. Wow, this is super interesting! I love making homemade mayo but have always used eggs. Your version looks super creamy and I bet it tastes delicious!

  2. Never could make a mayo with egg yolk that didn’t break or curdle, got fed up with my pitiful attempts. Besides, that unhealthy oil to egg ratio didn’t sit right with me so this recipe is a most welcome save, thank you..hope it doesn’t offend you that i mixed in the yolks of a couple of soft boiled eggs to the recipe.
