Malai kofta is a rich and creamy curry recipe where potato and cottage cheese balls/ dumplings are served with tomato and onion based sauce. This curry is very easy to make and rich in taste. This recipe is a pure homestyle malai kofta recipe.

What is malai kofta?

Malai Kofta is a combination of two elements. Kofta is a shallow fried or deep-fried ball/dumplings made from potatoes and cottage cheese. On the other hand, Malai means fresh cream but hold on, The base of this recipe is typically made from tomato, onion, and fresh cream.

This curry is not a spicy curry recipe but It has balanced flavors. This curry is mild in taste at the same time It has an exotic bay leaf flavor.

Ingredients to make malai kofta

For tomato sauce (gravy)

Tomato and onion – The main ingredients of the curry. Tomato adds the unique taste and tanginess to the curry while the onion is a must-have ingredient in most of the indian based gravies.

Black cardamom and bay leaf – These tiny little spices add an exotic flavor to the curry.

Fresh cream – Another hero ingredient of this malai kofta recipe. This curry is incomplete without fresh cream. Fresh cream adds the richness to the curry.

Other – oil, dry red chilies, melon seeds, salt, and sugar is used to season and enhance the curry. Melon seeds add a unique texture to the curry.

For Kofta (cottage cheese dumplings)

Cottage cheese It is the Indian style cheese known as “paneer”. It is widely used in many indian curries. It is not a salted cheese but it has a rich and smooth texture. This is another hero ingredient of malai kofta recipe. 

Boiled potatoes – Potatoes are used as a binding agent. It not only enhances the taste of the kofta but works as a great binding agent. 

Salt and green chili – to season koftas.

Corn flour – Corn flour coating helps to make kofta crispier. 

Oil – to deep fry or shallow fry koftas.

How to make malai kofta?

First of all soak melon seeds in a warm water and keep it aside.

To make koftas,

Take a box grater and grate cottage cheese and potatoes. Transfer to a bowl.

Add salt to taste and green chili.

Mix well. 

Take a small portion and foam a medium ball shape.

Coat it in a corn flour properly and keep it aside. 

Heat oil in a PADERNO saute pan. You can either shallow fry or deep fry the koftas. Add oil accordingly.

Slowly transfer the koftas into the oil. Fry until golden brown.Keep aside. 

To make curry,

Heat oil in a PADERNO sauce pan. Add bay leaf and black cardamom. Add garlic, onion, and tomatoes. Cook until tomatoes are softened. Transfer into a blender and blend to a smooth paste. 

Take a strainer and strain the curry.  Also, make a smooth paste of melon seeds and strain it along with the tomato paste.

Once you strain the curry, You will get a nice smooth paste. Heat 1 teaspoon oil in the same pan and transfer the strained smooth paste into it.

Add salt and sugar.mix well.Cook the curry until thickens.

Once the curry is thick enough, add fresh cream and mix well.

Assembling,

Transfer curry into a serving bowl.

Place kofta on the top of it.

Add some more curry on the top if you want.

Garnish with a little bit of fresh cream and cilantro.

Serve hot.

Easy Malai Kofta

Ingredients  

For kofta,

  • 1 cup Indian Cottage Cheese (paneer)
  • 2 medium potatoes, boiled
  • salt to taste
  • 1 teaspoon green chili, chopped
  • corn flour, for coating
  • oil, to shallow fry or deep fry

For curry,

  • 1 teaspoon oil
  • 1 black cardamoom
  • 1 bay leaf
  • 1 medium tomato, diced
  • 1 medium onion, diced
  • 1-2 garlic cloves
  • salt to taste
  • 2 teaspoon sugar
  • ½ cup fresh cream
  • fresh cilantro , for garnishing
  • 1 tablespoon melon seeds
  • ¼ cup water, to soak melon seeds

Instructions

  2. First, I absolutely love malai Kofta – it was the first Indian dish I was ever served. Love at first bite! I have never made them and can’t wait to try. Your post does remind me, though, that I need to check in with my Dukaan – they were closed for a while during COVID and I hope they survived. It is the only place I can think to get paneer. (Although I have been told it is not too hard to make!)
