I think the authentic south Indian poriyal recipe have urad dal as a side lentil and I have used moong dal here. now you may wonder, what poriyal means actually? well, poriyal is a Tamil word for sauteed or stir- fried (dish).

This carrot stirfry is so delicious in taste and you know! super easy to prepare.Also, this recipe is a less oil recipe. It is made from very minimal ingredients. You can sometimes add urad dal instead of moong of chana dal. I have seen some poriyal versions also includes onion in tadka, but i am avoiding it. This carrot poriyal is a typical no onion no garlic dry curry recipe.

now, coming to the serving of this poriyal, This recipe is a dry curry recipe so it can be served with simple chapati or plain paratha. However, poriyal is usually served with sambar, rasam, curd, and rice.

I have used dry coconut (semi powdered form) in this recipe but you can always try fresh coconut in this recipe. Also, you can grate the carrots but is used a thinly diced form of carrots here.

so, how to make carrot stir-fry recipe? stepwise photos:

Peel the skin of the carrots and chop in medium pieces or grate it(as you prefer).

Heat oil in a kadai, splutter the mustard seeds, curry leaves, and asafoetida.

Add green chillies and fry for a minute.

Add moong dal and coconut.

saute for a while.

Add the carrots.

add turmeric powder, red chili powder and salt.

add water and mix well. Cover and let it cook till the carrot is soft but not mushy.

Once all the moisture dries up, remove from stove.

Microwave Method

Add the tadka, carrot, green chillies, coconut and required salt in a microwave safe bowl and micro cook for 5 minutes in full power.

Toss everything once in between.

  • a pinch of asafoetida

  • 2 small green chilies, optional
  • ½ tbsp coconut, grated or dry powdered
  • ½ tsp turmeric powder
  • ½ tsp red chili powder
  • salt to taste
  • ½ cup water, to cook curry

Instructions
