Avocado Pasta with oven-baked vegetables is a very easy recipe and where Penne Pasta is made with creamy avocado sauce and topped with oven-baked vegetables 🙂

I love eating avocados. I mean yeah, apart from guacamole, I like to add avocados in simple salad recipes, mix fruit dish etc.
The idea of making a pasta sauce from avocados was in my mind for a long time. I wanted to incorporate avocados in the sauce especially because of its creamy texture.

Oven-baked vegetables
And this is my personal favorite part;) I LOVE baked vegetables. I baked my fresh vegetables until they get brownish. I used oil, salt, and pepper only.
Pasta with any vegetables is a great combo(At least for me). I have already shared pasta with crisp cauliflower and lemon sauce pasta with beans here. Today’s pasta recipe is different because of it’s sauce.

Ingredients required to make this avocado penne,
Vegetables
I used broccoli, green beans, zucchini and eggplant here. You can even use sweet potatoes and cauliflower too.
Pasta sauce
Ripe avocados, Cooking cream ( I used half and half cream here), chili flakes, a little bit of Italian seasoning to make a rich and creamy sauce.
Pasta – I have used Barilla Penne Rigate here. This sauce even goes great with spaghetti too.

Avocado pasta with oven-baked vegetables
Ingredients
Vegetables
- 1 cup Broccoli
- ½ cup beans, adjust as per your liking
- 1 medium eggplant
- 1 cup Zucchini
- 2 tablespoon oil
- salt and pepper
to boil pasta
- ½ packet Barilla Penne rigate
- water , to boil pasta (6 to 7 cups approx)
- salt to taste
- 1 tablespoon olive oil, or cooking oil
other
- 1 teaspoon oil
- 1 tablespoon garlic, minced
- ¼ cup onion, chopped
- 3 ripe avocadoa
- ½ cup fresh cream
- 1 teaspoon chilli flakes
- ½ teaspoon italian seasoning
- salt to taste
- pepper powder to taste
Instructions
for vegetables
- preheat your oven on 200˚C for 10 minutes.
- Cut eggplant and zucchini into medium slices. Also cut beans and broccoli into medium pieces.
- take a baking pan and spread some oil. you can line your baking pan with parchment pepper before.
- place your vegetables.
- add salt and pepper and again add some oil on the top.
- bake in a preheated oven for 15 minutes at 200˚C.
- keep aside.
Cooking pasta
- take a deep heavy bottom pan. Add water into it.
- add salt and oil. Bring water to boil on high flame.
- once water starts bubling , turn your flame to medium.
- Carefully add pasta into the hot water and bring it to boil again.
- cook your pasta.
- once pasta is cooked properly, reserve the pasta water before straining it. Reserve 2 cups of pasta water.
- strain the remaining pasta, discard water and allow it to cool down.
Pasta sauce preparation and assembling
- take a mixer jar and transfer avocados into it. add cream, chili flakes and italian seasoning.
- make a smooth paste.
- heat oil in a pan.
- add minced garlic and onion. saute for a while.
- add crushed avocado paste and mix.
- add salt and pepper.
- add reserved pasta water to adjust the consistency .
- mix well and cook the sauce on medium flame for 5 to 8 minutes.
- add boiled pasta mix well. simmer it for 2 to 3 minutes.
- Serve hot with baked vegetables.
Loving that avocado cream sauce! Seriously the best. Perfect cozy comfort meal for these changing of seasons and cooler weather.
