I prepared aloo methi recipe with boiled baby potatoes however you can prepare this recipe with regular potatoes as well. I prepared a tadka with finely chopped onions and I must say, sauteed onions are just enough to add fancy flavors to the dish.

Ingredients
- 8-10 nos baby potatoes, 2-3 medium regular potatoes
- 1 medium onion, chopped
- ½ cup fenugreek leaves/methi leaves, can be added upto 1 cup for this measurement
- 1 tbsp oil
- ¼ tsp cumins
- ¼ tsp mustard seeds
- a pinch of asafoetida
- ¼ tsp turmeric powder
- ½ tsp red chili powder
- ½ tsp coriander powder
- ¼ cup water, to simmer
- garam masala , optional
Instructions
- pressure cook your potatoes for 10 mins.
- cool it down cut into medium cubs, if you are using baby potatoes than just keep it aside.
- mean while wash and chop your methi leaves as well.
- heat oil in pan.
- add mustard and cumins.
- when they crackle add asafoetida.
- add green chilies.
- add onions and methi leaves.
- saute.
- add red chili powder,turmeric powder and coriander powder.
- add salt according to your taste.
- mix.
- add boiled potaotes.
- add water little bit.
- simmer for 3 mins on high flame.
- enjoy this recipe with paratha.

- if you are using regular potatoes, then tranfer 2-3 medium potatoes along with 2 cups of water into the pressure cooker and pressure cook it for 3-4 whistles on medium flame.
- for the baby potatoes, use same amount of water and follow the same method.
