Hey hey everyone, I missed you guys so much. For those who are new here, I was on maternity leave. I am slowly trying to resume my work. Well, I hope you are doing good too.

Shortbread cookies are my personal favorite cookies. I have already shared a few cookies recipe here on the blog. What makes these wholewheat cookies unique is no refined sugar is added. Yes, you read it right, I have made these cookies with coconut sugar. It tastes amazing and coconut sugar is a new favorite ingredient in our house.

The texture of these cookies is similar to “Indian nankhatai” so in our house, we call this recipe as “Gehu ki nankhatai or atta nankhatai” where “Atta” is nothing but a whole wheat flour.

Cookies are one of those oldest recipe founded in 7th centuary. I love making cookies at home and I learnt it from my mother. Below are the ingredients required for this recipe.

Ingredients

As I said, These cookies requires only 3 ingredients.

Whole wheat flour – Fine quality whole wheat flour is used here. You can get whole wheat flour at any grocery stores. I used “pillsbury chakki atta” here.

Ghee – I used homemade clarified butter here which is also known as “ghee”. You can check a complete recipe for homemade ghee here. You can even use this recipe for reference to make ghee in instant pot.

Coconut sugar – I used organic coconut sugar here to replace refined white sugar.

How to make 3 ingredients eggless whole wheat cookies

First and foremost, Preheat oven at 350˚F for 20 minutes.

Cream the clarified butter. This is the most important step. You required your ghee at room teperature. Whisk it using hand whisker or electric mixer at medium speed. You will get foamy butter after 5 minutes.

⭐Pro tip – If you living in countries where weather is warm such as India, add 2 to 3 icecubes into the ghee and cream it. Remove icecubes after 5 minutes.

Add sugar and mix it really well. You will get a nice smooth mixture.

Add flour slowly and make a dough.

Roll it and give them a cookie shape. Bake it at 350˚F for 15 to 20 minutes.

Cool it down and enjoy.
