Crunchy, spicy, and addictive crispy corn made with sweet corn, rice flour, corn flour, and Indian spices. A quick vegetarian snack or appetizer ready in about 20 minutes.
Prepare the corn: Drain the corn well and pat it completely dry with a clean kitchen towel. If using fresh corn, remove the kernels from the cob and dry them well.

Make the coating: Add corn kernels, rice flour, corn flour, coriander powder, red chili powder, turmeric, chaat masala, and salt to a bowl. Toss well.

Add water: Add water a little at a time and mix until the flour mixture lightly coats the corn. Do not make a smooth or runny batter.

Heat the oil: Heat oil for deep frying over medium heat.

Fry: Carefully add a small batch of coated corn to the hot oil. Fry until golden and crispy, turning occasionally. Do not overcrowd the pan.
Drain: Remove with a slotted spoon and place on a paper towel-lined plate.
Serve: Sprinkle with fresh coriander and extra chaat masala if desired. Serve immediately while hot and crunchy.
Notes
Dry the corn well: This helps the coating stick and reduces oil splattering.
Add only enough water to help the flour cling to the kernels.
Fry in small batches for the crispiest result.
Crispy corn is best served immediately because it softens as it sits.
For canned corn, drain thoroughly before using.
For frozen corn, thaw completely and pat very dry before coating.
