for paneer sandwiches:

for pasanda gravy:
onion-tomato paste:

Instructions
Method for preparing tomato-onion paste:
Heat kadai.Add cardamom(cardamom pods), cinnamon,cloves and onion.Saute it until brown.Add garlic,ginger and green chili.saute it.
Now, Add tomatoes and cashews.Cover kadai with lid and cook the mixture for 2-3 mins on medium flame.
Cook the mixture very well.
keep the mixture aside and let it cool down.
Make a fine paste and keep it aside.
Method for paneer sandwich:
take a mixing bowl and mix all the ingredients expect paneer slices.
slice your paneer into triangle.
slice each paneer into two halves gently.
stuff paneer triangles with stuffing.
heat oil in nonstick pan shallow fry paneer slices.
keep the slices aside.
Method for gravy/assembling:
Heat Oil in
kadai
.bay leaf and cumin.
When seeds crackle,add onion tomato paste.
Cook the paste until it reduces oil from sides.
Add salt,red chili powder,cumin powder and mix well.
Add cream and mix well.
Add sugar,kasuri methi.
Add paneer slices and gently mix .
garnish with coriander.
Serve hot.
Notes
skip cream if you do not have it.
for a vegan option substitute paneer with tofu and skip the cream. you can also use coconut cream instead.
