Ingredients
for tadka:

tablespoon
oil

teaspoon
mustard seeds
5-6
curry leaves

moong dal

of asafoetida

coconut
grated or dry powdered

teaspoon
turmeric powder

teaspoon
red chili powder
salt to taste

Instructions
Peel the skin of the carrots and chop in medium pieces or grate it(as you prefer).
Heat oil in a kadai, splutter the mustard seeds,curry leaves and asafoetida.
Add green chillies and fry for a minute.
Add moong dal and coconut.
saute for a while.
Add the carrots.
add turmeric powder, red chili powder and salt.
add water and mix well. Cover and let it cook till the carrot is soft but not mushy.
Once all the moisture dries up, remove from stove.

Microwave Method
Add the tadka, carrot, green chillies, coconut and required salt in a microwave safe bowl and micro cook for 5 minutes in full power.
Toss everything once in between.
