basmati rice
cooked
1
medium
tomato
chopped
½
cup
fenugreek leaves
chopped
salt to taste

onion
chopped
1
bay leaf
½
teaspoon
turmeric powder
a
pinch of
coriander powder
a
pinch of
garam masala
1
teaspoon
cumin seeds
1
tablespoon
oil
fresh coriander
to garnish
Instructions
If you don't have cooked rice available then cook the rice first and meanwhile complete your chopping.
now, Heat Oil in non-stick Kadai.
Add cumins.
When they crackle , add bay leaf and asafoetida.
Add onion and saute it until golden brown.
Add tomatoes ,salt , garam masala,coriander powder and turmeric powder.
Mix it well. Add methi leaves.
once the tomatoes are perfectly cooked, Add cooked rice.
Mix it well.
Cover with lid for 2 min to blend the flavors with rice.
Garnish with coriander.
Serve hot.

I have used frozen fenugreek leaves here.You can use fresh leaves as well.
