Traditional Sambar recipe made in Instant pot. Sambar is one of the popular South Indian recipes. It is a lentil-based stew served with idlis, dosa, and vada. Sambar is ideally a combination of lentils and vegetables.
Start the instant pot in sauté mode and heat oil in it. Add all the tempering ingredients. When the mustard seeds and cumin start to splutter, add the Curry leaves, chopped onions and sauté for 2 minutes.
Add the vegetables. Sauté for another 2 minutes.
Add salt, red chili powder, turmeric powder and mix well.
Toor dal and water to the instant pot. Add tomatoes and sambar powder.
Add water.
Change the instant pot setting to manual or pressure cook mode for 8 minutes at high pressure with vent in sealing position.
When the instant pot beeps, let the pressure release naturally. Stir the sambar so it is mixed well.
Garnish with cilantro and sambar is ready to be served.
