soak rice for 30 minutes (if you have time other wise skip this section).
take a pan and transfer the soaked rice into the pan, add water and cook the rice. strain and keep it aside. DO NOT ADD SALT. we will adjust the salt seasoning later.
mean while, boil your potaotes and peas. keep aside.
preparing coriander paste,
Take a mixer jar first. Add coconut( I have used powdered coconut here), ginger, green chillies, garlic, fresh coriander leaves and cumin.
crush to a smooth paste. Add 2tbsp water if required and crush to smooth paste. keep aside.
Pulao preparation,
heat oil in a pan. add cumin.
when they crackle add onions and saute until it turns brown(DO NOT CARAMELIZE ONIONS).
now, add coriander paste and saute for a while.
add salt and garam masala. mix well.
add boiled potates and peas. mix well.
add cooked rice and gently mix. simmer for 3 mins. serve hot.
