Sev-puri is one of the mouth-watering recipes among chaats in India.It is basically a street food from mumbai.I eat Panipuri,sevpuri and bhel anytime. You will find sev-puri and many other chaat recipes on streets in most of the cities.Nowadays even five-star hotel, several other joints offer sev puri, pani puri and chats in their menu.

Sev-puri chat is spicy ,tangy and sweet with so many different ingredients. What makes this dish unique is the different texture of their ingredients.
It is very easy to assemble sev-puri.All you need is,
- Puris or papdies – crispy fried puries
- Green chutney – Spicy chutney made from coriander and mint.
- Tamrind chutney – sweet and tangy chutney
- Red chutney -[optional] garlic chutney
- Veggies – boil potatoes, chopped onion and tomatoes.
And you are done.
You need to serve sev-puri immediately after assembling otherwise your Puri will become soggy.
I recommend you to prepare chutney one day before. It will save your time. you can make as many variations of stuffing according to your liking. I have shared Panipuri and dahi papdi chaat recipe here on the blog. there is a basic tutorial on how to make puri for panipuri.

Ingredients
- 6 puris /papdi
- 1 medium potato, boiled
- 6-7 tsp green chutney
- 4-5 tsp red spicy chutney, optional
- 6-7 tsp tamarind chutney
- 1 medium tomato, finely chopped
- 1 medium onion, finely chopped
- ¼ cup besan sev
- fresh coriander, to garnish
- a pinch of red chili powder
- a pinch of chaat masala
- ½ cup curd
- 1.5 tbsp powdered sugar
Instructions
- mix curd and sugar and keep aside.
- take puri and make a hole at the center with the help of thumb.
- stuff a tsp of boiled potato into each puris.
- add curd.
- add a tsp of green chutney into each puris.
- add a tsp more tamarind chutney.
- sprinkle and spread a generous amount of finely chopped onions over it.
- also sprinkle and spread finely chopped tomatoes over it.
- then sprinkle chilli powder, roasted cumin powder, chaat masala.
- furthermore, sprinkle black salt or salt to taste.
- then sprinkle and spread handful of thin sev.
- finally, top up with finely chopped coriander leaves and serve immediately.
