Veg cutlet or vegetable patties recipe with step by step photos – mix vegetable cutlet is one my favorite snack recipe . This recipe is made from boiled vegetables and monsoon is the season to enjoy thisrecipe. But for me, There is no specific season or time to eat cutlets😁. cutlets or veg patties usually serve with tomato catch-up and green chutney.I sometimes love to have this with tea also.

veg patties or veg cutlets can be baked,deep fried or shallow fried.it is totally depends on your liking. we used to have these cutlets in our shadi functions too.

This is very easy recipe to make.This recipe includes very common ingredients which can be easily found in your kitchen.
All you need to do is, boil vegetables. you can boil veggies in pressure cooker or in electric cooker.Rest of the procedure is very easy and quick.

As i have told you, it can be serve with green chutney and tomato catch-up. This recipe includes potato as a base for binding.Those who are having restriction towards consumption of potatoes can use sweet potato or yam instead.

Recipe Details for making veg cutlets/veg patties below:

  Recipe vegetable cutlets-how to make cutlet/patties

 Prep Time : 5-7 min | Cook Time : 20 min | Total Time : 25- 27 mins
 Serves : 8-10 medium size | Cuisine : indian

Ingredients:

  • potatoes , boiled – 2 medium
  • carrot,boiled – 1 large OR 1/2 cup
  • green peas – 1/4 cup
  • ginger-chili-garlic paste – 1 tsp
  • Salt – to taste
  • Sugar – to taste ( powdered sugar can be use as well)
  • lemon juice – 1/2 tsp
  • garam masala – 1/2 tsp
  • Fresh coriander, chopped – 2 tbsp

Other Ingredients:

  • Corn flour – 1 tbsp [ for corn flour slurry]
  • water – 1//4 cup
  • Plain wheat vermicelli,powdered – 1/4 cup 
  • corn flour – 1 tbsp
  • Oil – to roast cutlets

Equipment*:

corn flour preparation:

  1. dissolve 1 tbsp corn flour in 1/4 cup of water and keep it aside.
  2. take a plate and mix corn flour and vermicelli . 

    Method for cutlets: 

    1. Take a large mixing bowl.
    2. Mash boiled potato,carrot and peas very well.
    3. Add chopped coriander,lemon juice,ginger-chili-garlic paste.
    4. Add salt, sugar and garam masala.
    5. Mix the mixture well.
    6. Take any shape of cookie cutter.
    7. stuff the mixture into cookie cutter and gently press it.
    8. you will get a well shaped cutlets.do this with all your remaining mixture.
    9. now, heat tava. add oil.
    10. Mean while,dip your cutlets in corn flour slurry and then rub it in vermicelli mixture.
    11. once your oil is hot enough,place cutlets on hot tava.
    12. roast cutlets on both side until golden brown.
    13. serve hot.
    Note:
    • If you have any diet restriction towards consumption of  potatoes then use sweet potatoes or yam.
    • If you want to make a Jain version, avoid garlic and raw banana instead of potato.
