Recipe:Veg.Dum biryani

Hello all foodies,

Today’s recipe is Veg Biryani.Biryani is rice based( basmati/ sheila basmati rice) dish made with chicken, egg,meat or vegetables. I am pure vegetarian so I only prefer vegetable biryani.
It Was originated from Turkey/Persia and brought to south Asia later. It was one of the most famous dish in the kitchen of Mughal Empire . Birayni is one of the national dish of Pakistan. It is prepared in Hand I and known for its unique flavor and spices.


Let’s start with ingredients and don’t forget to check my tutorial on How to cook Plain rice.

Ingredients:

Ingredients for vegetables preparation:

  • Boil veggies( carrots,French beans,cauliflower, matar,potato)- 1 cup
  • Ghee – 3-4 tbsp
  • Salt – to taste
  • Yoghurt/curd – 1 cup approx
  • Jeera/cumin seeds – 1 tbsp
  • Asafoetida – pinch
  • Bay leaf – 1
  • Elaichi power/cardamom powder – 1 and 1/2 tsp
  • Cinnamon powder – 1 tsp
  • Cloves – 3-4
  • Garlic paste – 1 and 1/2 tbsp
  • Green chili- ginger paste -1and 1/2 tbsp
  • Onion ( sliced) – 1 medium size
  • Turmeric powder – 1 and 1/2 tsp
  • Red chilli powder – 1 tsp
  • Coriander powder -1 tsp
  • Everest Biryani masala – 1tsp
  • Mix dry fruits- 3-4 tbsp
Ingredients for Rice preparation:
  • Basmati Rice – 1/2 bowl approx,soaked at least 4-5 hours
  • Salt – to taste
  • Green cardamom -2-3
  • Bay leaf – 1
  • Cinnamon stick -1 ench
  • Cloves -2-3
  • Water – for cooking rice
Ingredients for biryani assembling:
  • Saffron- soaked in milk OR saffron milk – 3-4 tbsp approx
  • Birasta/fried onions – 1 cup approx
  • Coriender ,finally chopped – as per our need
Method for Rice preparation:
  1. Add 2-3 bowl water in your vesselvessel and boil water first.
  2. When you see water is boiling,add soaked rice.
  3. Add salt,cardamom,cloves,cinnamon stick,bay leaf.(NOTE: We use this khada masala for adding flavor in rice).
Method for vegetable preparations:
  1. Heat ghee in pan,add jeera,bay leaf,garlic- ginger -chilli paste and saute it for a while.
  2. Add onion and saute it well.
  3. Now,add salt,turmeric powder,coriander powder,chilli powder,biryani masala and mix well.
  4. Now its time to yoghurt,add yoghurt and stir this mixture well.
  5. Now add all cooked vegetables and cook for 2-3 mins.
  6. At last,add dry fruits.
  7. Our vegetables are ready now,keep it aside.
Assembling Method:
  1. Take a deep pot or handi.
  2. Spread almost half of our cooked rice in the first layer.
  3. Sprinkle some coriander and Birasta.
  4. Now spread vegetable gravy on this rice.
  5. Add 1-2 tbsp of saffron milk.
  6. Again spread our leftover rice.
  7. Sprinkle some Birasta,coriander,dry fruits.
  8. Last add saffron milk and 2tbsp ghee.
  9. Cover this handi/pot with aluminum foil & then cover with lid.(NOTE:by this process,we are giving DUM to over biryani)
  10. Cook for 5-10 min.
  11. Biryani is ready,serve hot….
